  4. Prepare the lettuce: Separate, wash and dry romaine completely; tear large outer leaves and keep the hearts chunky.
  5. Dress and plate: Toss romaine with just enough dressing, add croutons and sliced chicken, then finish with remaining Parmesan and black pepper.

Dry lettuce is essential: water prevents the dressing from clinging and makes the croutons soften quickly.

Ingredient choices: Dry washed romaine thoroughly and use a pasteurised egg yolk for the uncooked dressing. Anchovies, Worcestershire and Parmesan contribute salt and specific allergens. Cut bread into even croutons so they toast at the same rate.

Cooking control: Add the dressing oil gradually while whisking to establish a smooth emulsion. Cook chicken to 74°C and use clean equipment afterward. Dress the leaves just before serving, then fold in most of the croutons and add the chicken without crushing the lettuce.

If something goes wrong: A split dressing can be rebuilt by slowly whisking it into a small fresh base of mustard and a little water in a clean bowl. Soggy leaves usually result from washing water or early dressing. Add lemon cautiously once the anchovy and cheese are present.
