My tofu is not crispy

Crisp tofu by controlling water, coating, pan heat and batch size.

Quick diagnosis: Tofu needs a dry surface and open pan space. Pressing helps firm tofu, but unsuitable soft tofu will not behave like an extra-firm block.

What the Symptoms Tell You

Edges remain pale and soft while the pan fills with moisture.

Why This Usually Happens

The most common causes are connected to temperature, ratio, timing, ingredient condition or technique. Compare the dish with these specific checks:

  • Surface water remained or tofu type was too soft.
  • Pan was crowded or underheated.
  • Coating was heavy, wet or disturbed early.

Professional Rescue Method

  1. Drain and pat remaining tofu dry.
  2. Cook in smaller batches and leave pieces until they release.
  3. Return cooked pieces for a final dry crisp before sauce.

Safety and Quality Limit

Maintain safe handling after opening and discard tofu with sour spoilage odour or slimy surface.

Prevent It Next Time

  • Choose firm tofu and press appropriately.
  • Use a light starch coating.
  • Keep sauce until the crust is set.

Chef’s Verification Test

A finished cube should sound lightly crisp and hold its edge under gentle pressure.
