  1. Roast the pumpkin: Toss the pumpkin with 10 ml oil and a pinch of salt, then roast at 200°C for 20–25 minutes until tender and lightly caramelised.
  2. Keep the stock hot: Bring the vegetable stock to a gentle simmer in a separate saucepan and keep it hot throughout cooking.
  3. Crisp the sage: Heat 10 ml oil in a wide pan, fry the sage leaves for 20–30 seconds until crisp and transfer them to paper.
  4. Sweat the onion: Add the remaining oil and cook the onion over medium heat for 5–6 minutes until translucent.
  5. Toast the rice: Add garlic and rice, then stir for 90 seconds until the grains look glossy and their edges become translucent.
  6. Deglaze: Add the wine and stir until almost fully absorbed.
  7. Add stock gradually: Add one ladle of hot stock at a time, stirring regularly and waiting until mostly absorbed before adding more.
  8. Fold in the pumpkin: After about 14 minutes, fold in two-thirds of the pumpkin and continue cooking until the rice is al dente, about 18–20 minutes total.
  9. Finish off the heat: Remove from the heat, stir in nutritional yeast, lemon juice and 60–90 ml hot stock for a flowing consistency.
  10. Serve: Taste, adjust seasoning and serve immediately with the remaining pumpkin and crisp sage.
