Easy Step-by-Step Method

Complete one numbered step before moving to the next. Keep the heat and timing exactly as written.

  1. Make salsa: Mix tomatoes with 50 g onion, half the lime, half the coriander, 2 g salt and pepper. Keep chilled while the beef cooks.
  2. Cook the base: Heat oil in a frying pan. Cook remaining onion for 5 minutes, add garlic for 30 seconds, then beef and break up clumps as it browns.
  3. Season beef: Stir in tomato paste, cumin, paprika, chilli and remaining salt. Add water and simmer for 8–10 minutes until moist but not runny and at least 71°C.
  4. Warm tortillas: Heat tortillas briefly in a dry pan and keep wrapped in a clean towel.
  5. Assemble: Drain excess juice from salsa. Divide beef among tortillas and add lettuce and salsa.
  6. Finish: Sprinkle over remaining coriander and lime juice and serve immediately, three tacos per person.

Chef Notes & Tips

Warm corn tortillas before folding to reduce cracking. A spoonful of watery salsa can overwhelm a small tortilla, so drain lightly before serving.

Ingredient choices: Divide onion and lime between the cooked filling and salsa as listed. Drain very juicy tomatoes before mixing the salsa. Corn tortillas vary in size and thickness, so warm one first to judge its flexibility and filling capacity.

Cooking control: Brown and break up the beef, cook the tomato paste and spices, then add enough measured water for a moist filling. Verify ground beef reaches 71°C. Warm tortillas near serving time and keep salsa separate from the hot pan.

If something goes wrong: If tacos leak, the salsa or mince is too wet or the tortillas are overloaded. If tortillas crack, warm them more gently before filling. Extra chilli will not correct a flat filling that simply needs lime or salt.
