  5. Add peas and check: Quickly scatter peas over the top, cover and cook for 5 more minutes. Check chicken reaches at least 74°C and rice is tender; add a little boiling water if rice is still firm and dry.
  6. Rest: Leave covered off the heat for 10 minutes, remove bay leaves and fluff with parsley before serving.
