Easy Step-by-Step Method

Complete one numbered step before moving to the next. Keep the heat and timing exactly as written.

  1. Prepare the vegetables: Slice courgette and aubergine about 8 mm thick so they cook through without burning. Toss with olive oil, cumin, salt and pepper.
  2. Grill in batches: Heat a grill pan over medium-high heat. Cook the pepper for 8–10 minutes and the courgette and aubergine for 3–5 minutes per side, until tender and marked.
  3. Dress and drain: Place the vegetables on a plate, add lemon juice and parsley and leave for 3 minutes. Lift them out of any pooled liquid before filling the wraps.
  4. Warm the bread: Warm each flatbread briefly in a dry frying pan so it bends without cracking.
  5. Fill evenly: Spread 60 g hummus over each bread, leaving a border. Add spinach and one-quarter of the vegetables in a strip across the centre.
  6. Fold and serve: Fold the sides inward, roll firmly from the bottom and place seam-side down. Cut in half and serve while the vegetables are warm.

Do not stack wet vegetables straight onto the bread. Hummus provides enough moisture, so drain off the vegetable juices first. Check the hummus label for sesame.

Ingredient choices: Thin, even vegetable slices cook more predictably on a grill pan than thick irregular chunks. Hummus supplies both moisture and structure, so a separate creamy dressing is unnecessary. Check flatbread and hummus ingredients if dietary restrictions apply.

Cooking control: Grill in batches and let the cooked vegetables drain briefly after dressing with lemon. Warm each flatbread just enough to bend, spread hummus with a clean border and arrange the filling in a narrow band. Roll with the sides tucked inward.

If something goes wrong: A soggy wrap usually comes from vegetable juices or too much filling. A cracked wrap is often cold or stale. If aubergine is browned but springy inside, cook it longer before assembly; bread warmth cannot finish cooking the vegetable.
