Easy Step-by-Step Method

  1. Drain and cook the rice: Press tofu between clean towels for 15 minutes. Meanwhile cook rice with its measured water, covered on low according to the packet, then rest covered for 10 minutes.
  2. Make the sauce: Stir soy sauce, rice vinegar, brown sugar, ginger, garlic and the 100 ml sauce water together.
  3. Crisp the tofu: Cut tofu into 2 cm cubes, pat dry and toss with cornflour. Heat oil in a non-stick pan and fry in two batches for 8–10 minutes, turning until several sides are golden.
  4. Cook the broccoli: Steam broccoli for 4–5 minutes until tender but still bright, then drain.
  5. Glaze: Remove tofu from the pan. Pour in the sauce and simmer for 3–4 minutes until lightly syrupy. Return tofu and turn gently for about 1 minute to coat.
  6. Serve promptly: Divide rice and broccoli among four bowls, add glazed tofu, then finish with sesame oil and spring onion. Serve at once before the crisp coating softens.

Chef Notes & Tips

Drain tofu thoroughly before coating. Reduce the sauce on its own, then add tofu only briefly; prolonged simmering softens the crust.

Ingredient choices: Choose firm or extra-firm tofu and drain it well before coating. Cornflour should form a light dusting rather than a thick paste. Reduced-salt soy still contributes substantial seasoning, so taste the sauce before adding any extra salt.

Cooking control: Fry tofu in enough space for the surfaces to colour, turning only after a crust begins to form. Remove it before reducing the sauce, then return it for a brief coating. Steam the broccoli separately so its cooking water does not thin the glaze.

If something goes wrong: Tofu sticking to the pan can mean its surface was wet, the pan insufficiently heated or the crust disturbed too early. If the glaze becomes sticky like caramel, loosen it with a little water before returning the tofu. Keep the rice fluffy and separately cooked.
