  3. Whisk the dressing: Combine olive oil, lemon, vinegar, Dijon, capers, salt and pepper.
  4. Dress while warm: Fold hot potatoes through two-thirds of the dressing so they absorb it.
  5. Add fresh herbs: When the potatoes are warm rather than steaming, add spring onion, parsley, dill, chives and remaining dressing; serve at once.

Cooking control: Cook potatoes until just tender, drain and let surface steam escape. Dress while warm, folding gently without crushing every piece. Reserve a little dressing for a final adjustment after the potatoes absorb the first addition.
