  1. Prepare the tin: Heat the oven to 180°C conventional / 160°C fan. Line a 23 x 13 cm loaf tin with baking paper, leaving enough paper to lift out the cake.
  2. Mix dry ingredients: Whisk oat flour, cocoa, baking powder and salt until no cocoa lumps remain.
  3. Mix wet ingredients: Mash banana until smooth, then whisk in brown sugar, soy milk, oil, vinegar and vanilla.
  4. Combine: Fold dry ingredients into the wet mixture just until evenly moistened. Fold in the chopped chocolate; do not beat the batter for several minutes.
  5. Bake: Scrape into the tin and level the top. Bake for 45–55 minutes, checking from 45 minutes. A skewer in a chocolate-free part should come out with moist crumbs but no raw batter.
  6. Cool: Leave in the tin for 15 minutes, then lift onto a rack. Cool fully before slicing; oat cakes can seem gummy if cut warm.

Chef Notes & Tips

Use fine oat flour, not whole oats, for the stated texture. Banana weight is measured after peeling. A skewer coated in melted chocolate is not the same as a skewer coated in raw batter.

Ingredient choices: Weigh the peeled banana rather than counting fruits of different sizes. Use unsweetened plant milk and dairy-free chocolate. Oat flour has no wheat gluten network; certified gluten-free oats and suitable packaged ingredients are needed for a gluten-free claim.

Cooking control: Preheat the oven and line the specified loaf tin before mixing. Distribute cocoa and baking powder through the dry ingredients to prevent bitter pockets. Mix until evenly combined, then bake promptly. Test near the centre away from a melted chocolate piece.

If something goes wrong: A wet streak through the middle means the loaf needs further baking or complete cooling before assessment. If the top colours too quickly, loosely shield it with foil. A larger or smaller tin changes batter depth and therefore the baking time.
