Easy Step-by-Step Method

Complete one numbered step before moving to the next. Keep the heat and timing exactly as written.

  1. Make the beef base: Heat oil in a heavy pot and cook onions for 15 minutes until golden; reserve one-third. Add ginger, garlic, cumin and whole spices for 1 minute.
  2. Braise beef: Add beef, tomatoes, ground coriander, turmeric, chilli, half the salt and yogurt. Stir for 5 minutes, add 600 ml water, cover and simmer for 1½–2 hours until fork-tender.
  3. Concentrate: Uncover until a thick coating of gravy remains. Stir in garam masala; the base must not be watery.
  4. Prepare rice: Rinse and soak basmati for 20 minutes. Boil the 2 litres water with remaining salt, cook drained rice for 5–6 minutes and drain while its centre is still firm.
  5. Layer: Spread rice over tender beef. Add reserved onions, mint, coriander and 100 ml hot water. Cover tightly and cook on the lowest heat for 18–20 minutes.
  6. Rest: Leave covered off the heat for 10 minutes. Remove whole spices as you lift portions from bottom to top.

Chef Notes & Tips

Do not add rice while the beef is still tough. Finish the braise first, then reduce the liquid and begin the final rice stage.

Ingredient choices: Use a braising cut in even cubes and basmati rice. Yogurt, tomatoes and braising water all contribute moisture, so assess the beef gravy before layering. Whole spices perfume the pot but should be identified or removed before eating.

Cooking control: Cook the beef until tender before assembling with partly cooked rice. Reduce excessive gravy, layer gently and add only the specified finishing water. Keep covered during steaming, then allow the pot to settle before lifting portions.

If something goes wrong: If beef is still tough, continue its braise before adding rice. If rice becomes mushy, revisit parboiling and the amount of gravy under the layers. Stirring the assembled pot aggressively breaks the grains and obscures the layered texture.

Ingredient Substitutions

Food Safety & Doneness

For intact beef steaks and roasts, reach at least 63°C and rest for 3 minutes. Braising cuts need longer for fork-tender texture. Keep raw-meat utensils away from cooked food.

Serving & Plating

Lift from the side with a broad spoon to include rice, herbs and beef. Cool leftovers quickly and follow the stricter rice storage instructions.

Storage

Cool cooked rice quickly in shallow portions, ideally refrigerating within 1 hour. Keep at 4°C or below and use within 24 hours. Reheat only once to at least 74°C throughout. Do not keep a batch already reheated for another reheating cycle.
