Easy Step-by-Step Method

Complete one numbered step before moving to the next. Keep the heat and timing exactly as written.

  1. Start the rice: Rinse the jasmine rice. Put it in a lidded saucepan with the measured rice water, bring to a boil, then cover and cook on low for 12–15 minutes, following the packet if different. Leave covered off the heat for 10 minutes.
  2. Roast the aubergine: Heat the oven to 210°C conventional / 190°C fan. Toss the aubergine with the neutral oil and spread on a lined tray; roast for 20–25 minutes, turning once, until the centres are soft.
  3. Mix the glaze: Stir white miso, soy sauce, maple syrup, rice vinegar and the 30 ml glaze water until smooth. Taste before adding any extra seasoning because miso and soy are salty.
  4. Glaze briefly: Brush the aubergine with half the glaze and return to the oven for 5–7 minutes. Watch the edges closely and remove it once glossy and lightly browned.
  5. Cook the edamame: Boil the frozen edamame according to its packet, usually 4–5 minutes, then drain well.
  6. Build the bowls: Fluff the rice, divide between bowls and add aubergine and edamame. Stir sesame oil into the remaining glaze, drizzle over the bowls and finish with coriander.

Chef Notes & Tips

Aubergine should be soft before it is glazed. Firm cubes need more roasting, not more sugary glaze. Rice water absorption varies by brand; use the packet ratio when it differs.

Ingredient choices: White miso is generally a gentler starting point than a very dark, strongly fermented paste, but saltiness varies by brand. Use firm aubergines without spongy, dark centres and cook edamame according to the package. Keep rice water separate from the smaller glaze-water measure.

Cooking control: Roast the aubergine until tender before adding the sugary glaze. Reserve part of the glaze for finishing with clean utensils; do not repeatedly dip a brush used on the food into the finishing portion. Rest the cooked rice covered before fluffing it.

If something goes wrong: If the glaze burns while the aubergine remains firm, it was applied too early or the pieces were too large. A salty bowl needs more plain rice or vegetables, not additional syrup alone. Drain edamame well so water does not dilute the glaze at assembly.

Divide rice evenly, add aubergine and edamame, then finish with coriander and a controlled drizzle. Keep leftover rice handling separate from the glaze-making process.

Storage

Cool cooked rice quickly in shallow portions, ideally refrigerating within 1 hour. Keep at 4°C or below and use within 24 hours. Reheat only once to at least 74°C throughout. Do not keep a batch already reheated for another reheating cycle.
