Easy Step-by-Step Method

Complete one numbered step before moving to the next. Keep the heat and timing exactly as written.

  1. Brown the onions: Cook onions in oil in a heavy pot for about 15 minutes; reserve one-third. Add ginger, garlic, cumin and whole spices for 1 minute.
  2. Cook lamb masala: Add lamb, yogurt, tomatoes, ground coriander, turmeric, chilli and half the salt. Cook for 5 minutes, then add 550 ml water.
  3. Tenderise: Cover and simmer gently for 1½–2 hours until lamb is fork-tender. Uncover to reduce excess liquid and stir in garam masala.
  4. Prepare rice: Rinse and soak basmati for 20 minutes. Boil rice water with remaining salt, cook drained rice for 5–6 minutes and drain while the centres remain firm.
  5. Layer and steam: Spread rice over lamb and add reserved onion, mint, coriander and 100 ml hot water. Cover tightly and cook on the lowest heat for 18–20 minutes.
  6. Rest: Leave covered off the heat for 10 minutes. Lift portions gently through all layers, removing whole spices as you serve.

Chef Notes & Tips

The lamb gravy should be concentrated before layering. Do not stir the rice into the sauce before the final covered cook.

Ingredient choices: Use basmati and similarly sized lamb cubes. Yogurt, tomatoes and braising water all affect the moisture left under the rice. Keep the finishing water measured rather than adding it automatically to an already wet masala.

Cooking control: Cook the lamb until tender, then reduce excess gravy before layering the partly cooked rice. Spread the grains gently without compression. Steam covered and let the finished pot settle before lifting portions with a broad spoon.

If something goes wrong: Firm lamb should be corrected before rice is added. Mushy rice usually reflects excessive parboiling or too much remaining gravy. Hard upper grains may need a small measured splash of hot water and further covered cooking.

Food Safety & Doneness

Serve portions that include both rice and lamb rather than scraping only the top layer. Follow the recipe’s rice-specific cooling and reheating instructions for leftovers.

Storage

Cool cooked rice quickly in shallow portions, ideally refrigerating within 1 hour. Keep at 4°C or below and use within 24 hours. Reheat only once to at least 74°C throughout. Do not keep a batch already reheated for another reheating cycle.
