  1. Prepare oven and fish: Heat oven to 200°C conventional / 180°C fan. Lightly oil a baking dish with 10 ml oil, pat cod dry and season with salt and pepper.
  2. Mix the crust: Combine breadcrumbs, parsley, chives, garlic, lemon zest and remaining oil. The crumbs should be damp enough to hold loosely when pressed.
  3. Coat: Spread a thin layer of mustard over the top of each fillet, then press the breadcrumb mixture onto it.
  4. Bake: Bake for 12–18 minutes, depending on thickness, until the crust is golden and the centre reaches 63°C.
  5. Check colour: If fish is ready before the crumbs brown, use a brief grill finish while watching constantly; do not continue baking for many minutes.
  6. Serve: Add lemon juice at the table so the crust stays crisp. Lift fillets carefully with a broad spatula.

Chef Notes & Tips

Thin tail pieces cook faster than centre-cut portions. Choose similar thicknesses or remove thinner pieces earlier.

Ingredient choices: Choose similarly thick fillets and check for pin bones. Use fresh breadcrumbs and finely chopped herbs for an even crust. Lemon zest contributes aroma, while juice should be applied deliberately so it does not wet the crumb mixture excessively.

Cooking control: Dry the fish, apply a thin mustard layer and press on the prepared crumbs. Bake with space around the fillets and check 63°C at the thickest point, or opaque flesh that flakes readily. Stop once the fish is cooked even if a lighter crust is preferred.

If something goes wrong: A soggy crust can result from wet fish or too much topping. If crumbs darken early, loosely shield them. If the cod dries out, reduce thickness variation and begin checking earlier on the next batch.
