Easy Step-by-Step Method

Complete one numbered step before moving to the next. Keep the heat and timing exactly as written.

  1. Prepare: Rinse rice, soak for 20 minutes and drain. Pat fish dry and season with half the salt and half the turmeric; keep chilled.
  2. Cook onions: Heat oil in a heavy wide pot and cook onions for 12 minutes; reserve one-third. Add ginger, garlic, cumin and whole spices for 1 minute.
  3. Make masala: Add tomato, ground coriander, remaining turmeric, chilli and 100 ml base water. Cook for 8 minutes, then lower the heat and stir in yogurt and garam masala.
  4. Part-cook fish: Lay fish in the sauce and cook gently for 3–4 minutes per side. Lift it carefully onto a clean plate while retaining all sauce in the pot.
  5. Part-boil rice: Boil rice water with remaining salt, cook rice for 5–6 minutes and drain while still firm at the centre.
  6. Layer and finish: Return fish to its sauce, cover with rice, reserved onion, herbs and layering water. Cover tightly and cook on low for 15 minutes. Check fish reaches 63°C and rice is tender.
  7. Rest: Leave covered off the heat for 10 minutes. Add lemon and serve gently, removing whole spices.

Chef Notes & Tips

Do not use very delicate, thin fillets for layering. Lift fish with a broad spatula and avoid stirring the finished biryani.

Ingredient choices: Use substantial pieces of firm fillet and basmati rice. Yogurt and lemon season the fish, but prolonged acidic marinating can change its texture. Keep the base sauce concentrated before layering.

Cooking control: Parboil rice to the specified partial doneness and prepare the fish as directed. Layer without stirring through the delicate pieces, add measured finishing liquid and steam covered. Verify fish safe doneness before serving.

If something goes wrong: Mushy rice indicates too much pre-cooking or liquid. Broken fish may have been cut too small or mixed vigorously. If the base is wet, reduce it before assembly rather than trying to boil moisture away through the finished rice.
