Easy Step-by-Step Method

Season and Heat the Grill

  1. Toss the chicken thighs with the 8 g salt and neutral oil. Leave for 10–15 minutes while you heat a grill pan, barbecue or heavy frying pan until very hot.

Char the Chicken

  1. Cook the thighs over high heat in a single layer. Do not crowd the pan; work in batches if needed. Leave each piece undisturbed long enough to develop dark charred patches before turning.
  2. Cook until the thickest part reaches at least 74°C on a clean thermometer. The outside should be smoky and well browned while the centre remains juicy.

Rest and Cut

  1. Move the chicken to a clean board and rest for 5–6 minutes. Slice across the grain into bite-size strips or pieces, keeping any resting juices.

Build the Choila Seasoning

  1. In a large heatproof bowl combine the ginger, grated garlic, roasted cumin, ground coriander, chilli powder, crushed timur, lemon juice and 15 ml mustard oil.
  2. Add the warm sliced chicken and any resting juices. Toss thoroughly so every piece is coated.

Make the Fenugreek Tempering

  1. Heat the remaining 20 ml mustard oil in a small pan over medium heat. Add the fenugreek seeds and watch closely. They should darken to deep brown and become fragrant, not turn black.
  2. As soon as they are dark brown, remove the pan from the heat and add the sliced garlic. Stir for 10–15 seconds until fragrant and lightly coloured.

Temper the Chicken

  1. Immediately pour the hot oil, fenugreek and garlic over the seasoned chicken. It should sizzle strongly. Toss well so the hot tempering spreads through the spices and meat.

Add the Fresh Ingredients

  1. Fold in the red onion and spring garlic or spring onion. Rest the choila for 8–10 minutes so the warm chicken absorbs the seasoning without overcooking the fresh onion.

Finish and Serve

  1. Add the coriander and taste one complete bite containing chicken, onion and seasoning. Adjust salt, lemon or chilli only after tasting the combined bite.
  2. Serve warm or at room temperature as part of a snack plate or meal. Because this is cooked chicken, do not leave it at room temperature for extended periods.

Chef Notes & Tips

Choila should taste smoky, sharp, warm with spice and lightly numbing from timur, but it should still taste clearly of the meat. The hot fenugreek tempering is not decoration; it is the aromatic bridge between the charred chicken and the raw onion, herbs and spice mixture.

Cultural note: Choila is strongly associated with Newar food culture and is classically prepared with buffalo meat. This recipe is a chicken adaptation, not a claim that chicken is the only or original form.

Cooking control: Real char matters. A crowded pan steams the chicken, so cook in batches if necessary. Rest before slicing so the juices stay in the meat. Keep the fenugreek pan beside you while it cooks because the seeds can move from deep brown to bitter black very quickly.

Flavour balance: Taste the finished choila with onion and herbs before changing anything. More chilli is easy to add; bitterness from burnt fenugreek is not fixable. Lemon should sharpen the dish without making it wet or sour.

If something goes wrong: Dry chicken usually means excessive cooking or pieces cut too small before grilling. If the tempering tastes burnt, remake it rather than mixing it in. If the dish tastes harshly mustard-heavy, add a little more cooked chicken, onion and coriander rather than extra acid or sugar.

Food Safety & Doneness

Keep raw poultry separate from ready-to-eat food and do not wash it. Check the thickest flesh and any stuffing reach at least 74°C with a food thermometer; colour and timing alone are not reliable.

Serving & Plating

Serve in modest portions as part of a meal or snack plate. Refrigerate prepared chicken promptly even when the dish is intended to be eaten cool.

Storage

Refrigerate promptly in shallow covered containers at 4°C or below and use within 3 days. Reheat only the portion needed to at least 74°C throughout. Discard food left unrefrigerated for more than 2 hours, or 1 hour above 32°C.
