Easy Step-by-Step Method

Complete one numbered step before moving to the next. Keep the heat and timing exactly as written.

  1. Preparation: Warm the dashi to just below a simmer and remove any kombu used to make it before boiling.
  2. Flavour base: Soak wakame in cool water for 5 minutes, drain and cut large pieces into bite-size sections.
  3. Main cook: Add enoki and tofu to the hot dashi and warm gently for 3 minutes without vigorous stirring.
  4. Simmer and check: Place miso in a bowl, whisk with a ladle of hot dashi until smooth, then return the mixture to the pan.
  5. Texture and balance: Keep the soup below boiling, taste and add soy only if the miso and dashi need more salt.
  6. Finish and serve: Divide tofu and wakame evenly, top with spring onion and serve immediately.

Chef Notes & Tips

Never boil after adding miso; high heat flattens its aroma and roughens delicate tofu.

Ingredient choices: This formulation specifies kombu-shiitake dashi rather than a fish-based stock. Miso products vary in salt and grain ingredients. Wakame expands during hydration, so measure the dry quantity carefully.

Cooking control: Prepare wakame and cook enoki thoroughly according to the product guidance. Warm tofu gently in the broth. Dissolve miso in a small amount of warm liquid before returning it to the pot, avoiding a prolonged hard boil.

If something goes wrong: Lumps indicate miso was added without proper dissolution. An overly salty soup may have received both salty dashi and unnecessary soy sauce. Broken tofu comes from vigorous stirring.

Ingredient Substitutions

Food Safety & Doneness

Wash produce and use clean utensils. Keep perishable ingredients refrigerated. Refrigerate cooked food in shallow containers within 2 hours, or within 1 hour when the surroundings exceed 32°C.

Serving & Plating

Serve promptly with spring onion and an even share of tofu and seaweed. Add optional soy sauce only after tasting the finished broth.

Storage

Refrigerate promptly in shallow covered containers at 4°C or below and use within 3 days. Reheat only the portion needed to at least 74°C throughout. Discard food left unrefrigerated for more than 2 hours, or 1 hour above 32°C.
