  1. Tenderise: Mix lamb with raw papaya paste and salt, cover and refrigerate for 45–60 minutes, not overnight.
  2. Build the spice paste: Add fried onion, ginger, garlic, gram flour, garam masala, cardamom, mace, clove, mint and melted ghee.
  3. Work to a fine texture: Mix until cohesive and soft; chill for 30 minutes so the fat firms enough for shaping.
  4. Shape delicately: With oiled hands form small flat patties, handling them lightly because galouti mixture is intentionally tender.
  5. Shallow-fry in ghee: Cook on a medium-hot flat pan for 2–3 minutes per side until browned and fully cooked without drying the centre.
  6. Serve promptly: Rest for 2 minutes and serve hot on mini paratha with onion and mint chutney.

Chef Notes & Tips

Papaya is powerful: a short measured marination tenderises, while an overnight rest can make the mince mushy. Allow 1 hour of refrigerated resting as described in the method.

Ingredient choices: Use very finely minced lamb and accurately measure the papaya paste. Its strength varies, so do not extend the recipe’s marinating time casually. Ground mace, clove and cardamom are potent and should not be estimated by large spoonfuls.

Cooking control: Keep the mixture refrigerated during resting. Cook one small test patty to assess binding and seasoning, then shape the remaining mixture consistently. Turn with a broad spatula and verify the ground-lamb centre reaches 71°C.

If something goes wrong: A mixture that becomes paste-like or difficult to handle may have had too much papaya or too long a rest. Extra flour can make the kebabs heavy; correct gradually. Do not taste the raw mince to check the spices.
