  3. Main cook: Lower the heat, soften shallot and garlic, add thyme and flour, and cook the flour for 90 seconds.
  4. Simmer and check: Whisk in stock gradually, return the soup mushrooms and simmer 15 minutes until fully tender.
  5. Texture and balance: Blend three-quarters of the soup, return it to the pan and add cream without allowing a hard boil.
  6. Finish and serve: Balance with lemon and pepper, then top each bowl with the reserved sautéed mushrooms and thyme.

Crowding mushrooms prevents browning. Use a wide pan and wait for their released moisture to evaporate.

Ingredient choices: Use firm brown mushrooms and slice evenly. Flour provides controlled thickening, while cream finishes the texture. Keep some browned mushroom pieces separate if a textured garnish is desired from the same ingredient quantity.
