Easy Step-by-Step Method

  1. Preparation: Char onion and ginger cut-side down until dark at the edges; toast star anise, cinnamon and coriander seed separately.
  2. Flavour base: Cover chicken with water, bring slowly to a simmer and skim thoroughly before adding charred aromatics and spices.
  3. Main cook: Poach gently until both the thickest breast and thigh reach at least 74°C, checking clear of bone. Lift onto a clean board, remove the cooked meat and keep covered while the bones simmer in the broth for another 30 minutes.
  4. Simmer and check: Strain through a fine sieve, season with fish sauce and keep the broth hot but not violently boiling.
  5. Texture and balance: Soak or cook rice noodles according to their thickness, rinse briefly and divide among warmed bowls.
  6. Finish and serve: Slice chicken, arrange over noodles and pour boiling-hot broth on top; finish with thoroughly cooked bean sprouts, herbs and lime. Cook sprouts separately according to their package before adding; hot broth alone is not the cooking step.

Chef Notes & Tips

A bare simmer and regular skimming create a clear broth; a rolling boil emulsifies fat and turns it cloudy.

Ingredient choices: Use a whole chicken close to the stated weight and check more than one thick area for doneness. Toast or char aromatics only as directed, avoiding black burnt interiors. Rice noodle thickness determines soaking or cooking time.

Cooking control: Simmer gently, skim as needed and cook chicken to 74°C. Remove meat with clean equipment and prepare noodles separately. Cook bean sprouts thoroughly before serving and strain out hard spice pieces.

If something goes wrong: Overpowering star anise or cinnamon can obscure the chicken broth. Vigorous boiling may cloud the stock and toughen meat. Noodles left in the pot absorb liquid and lose definition.

Ingredient Substitutions

  • ↔ Use bone-in chicken thighs for a smaller batch; tamari can replace fish sauce only if needed.

Food Safety & Doneness

Keep raw poultry separate from ready-to-eat food and do not wash it. Check the thickest flesh and any stuffing reach at least 74°C with a food thermometer; colour and timing alone are not reliable.

Serving & Plating

Assemble noodles, chicken and cooked sprouts in bowls, then ladle over hot broth. Offer lime and herbs separately for final adjustment.

Storage

Refrigerate promptly in shallow covered containers at 4°C or below and use within 3 days. Reheat only the portion needed to at least 74°C throughout. Discard food left unrefrigerated for more than 2 hours, or 1 hour above 32°C.
