  2. Flavour base: Crisp six sage leaves in the remaining 5 ml olive oil and drain; reserve the fragrant oil and leaves.
  3. Main cook: Transfer roasted vegetables to a pot with stock and remaining sage and simmer 10 minutes.
  4. Simmer and check: Blend until completely smooth, then adjust thickness so it pours in a continuous ribbon.
  5. Texture and balance: Add cream, nutmeg and cider vinegar over low heat, tasting for sweet-acid balance.
  6. Finish and serve: Serve with crisp sage, toasted pumpkin seeds and drops of sage oil.
