Ingredients

Easy Step-by-Step Method

Complete one numbered step before moving to the next. Keep the heat and timing exactly as written.

  1. Preparation: Roast squash with olive oil at 210°C for 28–32 minutes until deeply coloured at the edges.
  2. Flavour base: Sweat onion and apple in butter until soft, then add ginger and cinnamon for 30 seconds.
  3. Main cook: Add roasted squash and stock, simmer 12 minutes and scrape in any caramelised roasting juices.
  4. Simmer and check: Blend until satin-smooth and adjust the consistency with hot stock.
  5. Texture and balance: Stir in cream and cider vinegar over low heat, balancing the apple’s sweetness with salt and acid.
  6. Finish and serve: Finish with toasted pecans and fine apple matchsticks just before serving.

Chef Notes & Tips

Choose a tart apple; a sweet apple can make the soup flat and dessert-like.

Ingredient choices: Weigh peeled squash and use a tart apple rather than a very sweet one. Cinnamon is a background spice in this formulation. Check pecans for freshness before toasting.

Cooking control: Cook the squash and apple until fully tender, then blend with temperature-suitable equipment. Add cream gently and adjust the liquid before seasoning. Taste vinegar only after the cooked apple and squash are combined.

If something goes wrong: A dessert-like finish may contain too much effective sweetness or cinnamon. Correct with an increased unsweetened squash-stock base and controlled acid. A fibrous texture needs more cooking or blending.

Ingredient Substitutions

  • ↔ Pear can replace apple; oat cream can replace dairy cream.

Food Safety & Doneness

Wash produce and use clean utensils. Keep perishable ingredients refrigerated. Refrigerate cooked food in shallow containers within 2 hours, or within 1 hour when the surroundings exceed 32°C. For hot soup, use an immersion blender with its head submerged, or cool sufficiently before using a blender approved for warm liquids. Never seal hot soup in a closed cup blender.

Serving & Plating

Serve with toasted pecans scattered lightly. Include the nuts and dairy when describing the complete bowl.

Storage

Refrigerate promptly in shallow covered containers at 4°C or below and use within 3 days. Reheat only the portion needed to at least 74°C throughout. Discard food left unrefrigerated for more than 2 hours, or 1 hour above 32°C.
