Easy Step-by-Step Method

Complete one numbered step before moving to the next. Keep the heat and timing exactly as written.

  1. Preparation: Rinse barley and simmer it in stock with turmeric for 35 minutes.
  2. Flavour base: Add onion, carrot and celery and cook until barley is tender and broth thickens.
  3. Main cook: Stir in chickpeas and half the herbs and simmer another 10 minutes.
  4. Simmer and check: Whisk yogurt with one ladle of soup, then add it over low heat while stirring.
  5. Texture and balance: Remove from heat before boiling, add remaining herbs and lemon, and adjust consistency.
  6. Finish and serve: Rest 5 minutes and serve with fresh dill and black pepper.

Barley continues thickening as it stands; keep hot stock available.

Ingredient choices: Use pearl barley rather than assuming all barley types cook in the same time. Chickpeas are already cooked. Plain yogurt supplies acidity and dairy; the barley means the soup is not gluten-free.

Cooking control: Simmer barley until tender with a slight chew, adding liquid as required by the method. Warm chickpeas through and add herbs at the appropriate stage. Temper yogurt with warm soup before incorporating it over gentle heat.

If something goes wrong: A very thick pot may simply contain barley that continued absorbing broth. Split yogurt often met excessive heat. If herbs taste dull, reserve part of the stated quantity for the finish next time.

Storage

Refrigerate promptly in shallow covered containers at 4°C or below and use within 3 days. Reheat only the portion needed to at least 74°C throughout. Discard food left unrefrigerated for more than 2 hours, or 1 hour above 32°C.
