  1. Blend cored tomatoes and pass them through a sieve to remove skin and seeds.
  2. Soak bread crumb in the tomato liquid for 10 minutes until fully hydrated.
  3. Blend bread, tomato, garlic and vinegar until smooth, then add olive oil slowly.
  4. Continue blending until thick, glossy and able to hold a shallow spoon trail.
  5. Season and chill at least 2 hours; loosen only with tomato juice if needed.
  6. Serve with chopped egg and serrano ham arranged separately on the surface.

Chef Notes & Tips

Salmorejo is thicker than gazpacho; structure comes from bread and olive oil, not cream. Allow additional refrigeration time until thoroughly chilled; preparation and cooking times do not include chilling.

Ingredient choices: Use ripe plum tomatoes and sound day-old bread crumb. Garlic is deliberately modest because raw garlic grows prominent in a cold purée. Cook eggs until whites and yolks are firm and keep ready-to-eat ham refrigerated as labelled.

Cooking control: Soften bread with the tomato mixture, then blend thoroughly and incorporate oil steadily. Chill promptly and reassess salt and vinegar when cold. Keep eggs and ham separate until portioning.

If something goes wrong: A coarse texture may need more bread softening or blending. A greasy layer can reflect oil added too quickly or insufficient mixing. Do not thin it to gazpacho consistency unless presenting that as a variation.

Ingredient Substitutions

Food Safety & Doneness
