Trahanas Soup with Halloumi

Trahanas soup has a pleasantly sour cereal-and-dairy character, with halloumi adding small salty bites. The dried trahanas softens and thickens the broth as it cooks. The final consistency should remain spoonable because it continues thickening as it stands.

Ingredients

Easy Step-by-Step Method

Complete one numbered step before moving to the next. Keep the heat and timing exactly as written.

  1. Check the trahanas: Read the packet for soaking and cooking instructions; products vary. If soaking is specified, use part of the measured stock and include that extra time.
  2. Start the soup: Bring the stock to a gentle simmer in a saucepan. Whisk in the trahanas gradually to prevent clumping.
  3. Cook slowly: Simmer on low for 20–30 minutes, or the packet time, stirring frequently at the base until the grains soften and the soup becomes creamy.
  4. Add halloumi: Stir in halloumi cubes and butter and cook for another 4–5 minutes until the cheese is hot.
  5. Balance: Add pepper and taste before adding salt or optional lemon; both the cheese and sour grain already contribute strong seasoning.
  6. Serve: Loosen with a little hot water if the soup thickens while standing and serve in warmed bowls.

Chef Notes & Tips

Use vegetable stock for the vegetarian version and check the cheese rennet and trahanas ingredients. Trahanas normally contains wheat and dairy; it is not a gluten-free grain.

Ingredient choices: Check the dried trahanas product for its grain, dairy ingredients and preparation directions. Halloumi and stock may supply all the required salt. Lemon is optional and should be considered only after tasting the natural sourness of the soup.

Cooking control: Soak or prepare trahanas as directed, then simmer gently and stir along the bottom to prevent sticking. Add halloumi at the specified stage. Adjust with small additions of hot water until the texture is comfortable to eat.

If something goes wrong: A very thick pot usually needs loosening shortly before serving. Scorching happens easily when softened cereal settles on the base. If the soup is already sharply sour, omit extra lemon rather than masking it with more cheese.

Ingredient Substitutions

  • ↔ Halloumi → another suitable grilling cheese
  • ↔ Butter → olive oil
  • ↔ Sour trahanas → a comparable food-grade product, adjusting time and liquid to its packet

Food Safety & Doneness

Use pasteurised dairy products and keep them refrigerated until needed. Follow package use-by instructions, and refrigerate prepared food promptly in shallow containers.

Serving & Plating

Serve hot in warm bowls with halloumi distributed evenly. Stir between ladles so the cereal does not settle into the last portion.

Storage

Refrigerate promptly in shallow covered containers at 4°C or below and use within 3 days. Reheat only the portion needed to at least 74°C throughout. Discard food left unrefrigerated for more than 2 hours, or 1 hour above 32°C.
