Easy Step-by-Step Method

Complete one numbered step before moving to the next. Keep the heat and timing exactly as written.

  1. Brown mushrooms: Heat 20 ml oil in a wide pan and brown mushrooms in batches for 6–8 minutes per batch, allowing their liquid to evaporate. Set aside.
  2. Soften onion: Add remaining oil and onion and cook for 6 minutes. Stir in garlic and crushed coriander for 1 minute.
  3. Reduce wine: Pour in red wine, scrape up browned bits and simmer uncovered for 4–5 minutes.
  4. Cook potatoes: Add potatoes, stock, bay leaves, salt and pepper. Cover partly and simmer for 18–22 minutes until potatoes are almost tender.
  5. Return mushrooms: Add mushrooms and simmer uncovered for 8–10 minutes so the sauce lightly coats everything.
  6. Finish: Remove bay leaves, taste and scatter with parsley. Serve with bread prepared separately if desired.

Chef Notes & Tips

This mushroom variation is not traditional pork afelia. Do not grind the coriander seeds to dust; lightly crushed seeds give a more distinct aroma.

Ingredient choices: Use firm chestnut mushrooms and waxy potatoes. Lightly crush coriander seeds rather than turning all of them into fine powder. Select wine suitable for vegans when that claim is intended; cooking does not guarantee complete alcohol removal.

Cooking control: Brown mushrooms in batches before building the stew. Reduce the wine, then simmer potatoes in the sauce until tender. Keep mushrooms substantial and add the finishing parsley after the main reduction.

If something goes wrong: A watery stew may come from crowded mushroom browning or insufficient reduction. Hard potatoes need further gentle cooking with enough liquid. If wine tastes harsh, allow the base to cook before adding delicate finishing herbs.

Ingredient Substitutions

Refrigerate promptly in shallow covered containers at 4°C or below and use within 3 days. Reheat only the portion needed to at least 74°C throughout. Discard food left unrefrigerated for more than 2 hours, or 1 hour above 32°C.
