  2. Cook vegetables: Heat half the neutral oil in a wide pan. Fry carrot and mushrooms for 5–6 minutes, then peas for 2 minutes. Lift aside.
  3. Fry aromatics: Add remaining oil, spring onion whites, garlic and ginger and stir for 30 seconds.
  4. Fry rice: Add rice in two batches if the pan is small. Spread it out, leave briefly to heat, then lift and turn rather than pressing it into a paste.
  5. Season and heat through: Return vegetables, add soy and white pepper and stir-fry until the rice is steaming throughout and reaches at least 74°C.
  6. Finish: Fold in spring onion greens and sesame oil and serve immediately. Do not repeatedly cool and reheat this batch.

The stated time starts with safely refrigerated cooked rice. Cooking and rapidly chilling a fresh batch takes extra time. Do not reuse rice that has already been reheated.
