  1. Cook the potatoes: Simmer potatoes until tender, drain, cool just enough to handle and cut into bite-size pieces.
  2. Boil the eggs: Lower eggs into gently boiling water and cook for about 10–12 minutes until the whites and yolks are firm, then chill, peel and quarter.
  3. Build the spice base: Mix warm potatoes with onion, chilli, coriander, lemon, cumin, turmeric, timur and salt.
  4. Temper the oil: Heat mustard oil until shimmering, add fenugreek and cook until dark brown but not burnt.
  5. Finish: Pour the hot tempering over the potatoes, toss, fold in egg quarters gently and rest for 10 minutes before serving warm.

Pour the tempering on while both oil and potatoes are warm so the spices bloom and coat the surfaces evenly.

Ingredient choices: Cook eggs until both whites and yolks are firm. Use food-grade culinary mustard oil and identify timur or Sichuan pepper accurately. Potatoes should hold their shape after cooking and draining.

Cooking control: Prepare potatoes and eggs separately, then cool enough for clean cutting. Toss potatoes with spices and lemon before folding in egg pieces. Temper fenugreek carefully and add fresh onion and coriander with clean utensils.

If something goes wrong: Burnt fenugreek produces bitterness and the small tempering should be remade. Broken eggs usually come from rough stirring. If potatoes are wet, release steam after draining before dressing them.
