Easy Step-by-Step Method

  1. Soak Noodles: Place flat rice noodles in a heat-proof bowl and cover with warm water. Soak for 6–8 minutes until pliable but still firm (al dente). Drain and rinse with cold water to halt cooking.
  2. Emulsify Sauce: In a small bowl, whisk together tamarind paste, tamari, coconut sugar, lime juice, sriracha, and water until completely smooth and dissolved.
  3. Sear Tofu: Heat 1 tablespoon oil in a large wok over medium-high heat. Add cubed tofu and fry for 5–6 minutes, turning occasionally until golden and crisp on all sides. Transfer to a plate.
  4. Sauté Aromatics: Heat the remaining 1 tablespoon oil in the wok. Add minced garlic and sliced shallots; stir-fry for 45 seconds until fragrant. Add julienned carrots and stir-fry for 1 minute.
  5. Combine & Glaze: Increase heat to high. Add drained rice noodles, crisp tofu, and tamarind sauce. Toss continuously using a lifting motion for 2 minutes until noodles absorb the sauce evenly.
  6. Incorporate Greens: Toss in bean sprouts and green onions. Cook for 45–60 seconds until slightly wilted yet crisp.
  7. Plate & Serve: Remove from heat, transfer to warm plates, and finish with crushed peanuts, chopped cilantro, and fresh lime wedges.

Chef Notes & Tips

Soak noodles in warm water rather than boiling them on an active burner to prevent starch breakdown and mushiness.

Prepare all ingredients prior to cooking (mise en place), as high-heat stir-frying takes under 5 minutes once started.

Maintain high wok heat throughout cooking to achieve mild caramelization ("wok hei") without scorching the sauce.

Ingredient choices: Tamarind concentrate can be much stronger than ready-to-use tamarind liquid, so check the product and test the sauce before using it all. Rice noodle thickness changes soaking time. Gluten-free tamari and ordinary dark soy sauce are not interchangeable for a gluten-free label.

If something goes wrong: If noodles clump, loosen with a small splash of water and lift gently rather than tearing them apart. If they turn mushy, reduce the pre-soak next time. Add tamarind sauce gradually: excessive acidity is harder to correct than a small final adjustment with lime.
