Easy Step-by-Step Method

  1. Make the topping: Cover potatoes with cold water, bring to a boil and simmer for 15–20 minutes until a knife passes through easily. Drain and steam-dry for 2 minutes, then mash with oat milk, 20 ml oil and half the salt.
  2. Start the filling: Heat the remaining oil in a wide pan. Cook onion and carrot for 8 minutes; add mushrooms and cook for another 8 minutes until their released water evaporates.
  3. Develop the sauce: Add garlic and tomato paste for 1 minute, then stock, lentils, thyme, pepper and remaining salt. Simmer uncovered for 12–15 minutes until moist but not soupy.
  4. Add the peas: Stir in frozen peas and simmer for 2 minutes. Taste the filling before spreading it into a roughly 25 cm baking dish.
  5. Assemble: Heat the oven to 200°C conventional / 180°C fan. Spoon mash over the filling in small portions, spread gently and roughen the surface with a fork.
  6. Bake and rest: Bake for 25–30 minutes until bubbling at the edges and lightly golden on top, with the centre reaching 74°C. Rest for 10 minutes before spooning into portions.

Chef Notes & Tips

Drain lentils well and reduce the sauce before layering. Warm mash spreads more easily than cold mash; dot it over the filling instead of dropping one heavy mound in the centre.

Ingredient choices: Use cooked green or brown lentils that hold their shape. Floury potatoes make a lighter mash than very waxy ones. Unsweetened oat milk loosens the topping without giving it a dessert-like sweetness; the vegetable stock should suit the intended dietary requirements.

Cooking control: Evaporate the mushroom moisture and reduce the lentil filling before layering. Steam-dry the boiled potatoes so the topping does not become wet. Dot mash over the surface in smaller spoonfuls, join them gently, then roughen the top to encourage browning.

If something goes wrong: If mash sinks into the filling, the base was probably too wet or the topping was dropped in one heavy mound. If the top colours before the middle heats through, cover loosely and continue cooking to the centre-temperature check. Rest briefly before portioning.
