Prepare the Chickpeas

Prepare the Vegetables

  1. Cut the cherry tomatoes, cucumber, red onion and bell pepper evenly. Chop the fresh herbs and place everything except the avocado into a large mixing bowl.

Prepare the Dressing

  1. Whisk together the extra-virgin olive oil, lemon juice, lemon zest, garlic, cumin, salt and black pepper until lightly emulsified.

Combine the Salad

  1. Add the chickpeas to the prepared vegetables. Pour over approximately three-quarters of the dressing and toss gently until evenly coated.
