Easy Step-by-Step Method

  1. Make slaw and sauce: Toss cabbage with half the lime and 2 g salt. Mix yogurt with remaining lime, coriander and pepper; keep chilled.
  2. Set up crumbs: Put flour mixed with paprika and remaining salt in one bowl, eggs in another and breadcrumbs in a third.
  3. Coat fish: Pat fish dry, check for bones, then coat with flour, egg and crumbs in that order. Keep raw-fish utensils away from the sauce.
  4. Fry: Heat oil in a frying pan over medium-high heat. Cook fish in batches for about 3–4 minutes per side until golden and at least 63°C in the thickest piece; drain on a rack.
  5. Warm tortillas: Warm tortillas in a separate dry pan and keep covered with a clean towel.
  6. Assemble: Squeeze excess liquid from slaw. Fill tortillas with slaw, fish and yogurt sauce and serve immediately.

Chef Notes & Tips

A rack drains fried fish without trapping steam underneath. Discard flour, egg and crumbs left after coating raw fish.
