Easy Step-by-Step Method
Complete one numbered step before moving to the next. Keep the heat and timing exactly as written.
- Prepare rice and onion: Rinse basmati and soak in cold water for 20 minutes, then drain. Heat oil in a heavy lidded pan and cook onions for 15–18 minutes until golden; reserve one-third.
- Brown the mushrooms: Add mushrooms to the remaining onions and cook for 8 minutes until their liquid reduces. Stir in garlic, ginger, cumin, cardamom, cinnamon and bay leaves for 1 minute.
- Make the base: Add tomato, ground coriander, turmeric, chilli and half the salt. Cook for 5 minutes, lower the heat and stir in soy yogurt, peas and garam masala.
- Part-cook the rice: Bring the 2 litres water to a boil with remaining salt. Add drained rice and boil for 5–6 minutes until the outside softens but the centre is firm. Drain immediately.
- Layer and steam: Spread rice over the mushroom mixture without stirring. Sprinkle with reserved onions and coriander, then drizzle over 100 ml hot water. Cover tightly and cook over the lowest heat for 18–20 minutes.
- Rest and serve: Switch off the heat for 10 minutes with the lid still on. Remove the cinnamon stick, cardamom pods and bay leaves as you lift portions gently from bottom to top.
Chef Notes & Tips
Do not fully cook the rice before layering. The mushrooms should have lost their excess liquid before they are covered; a watery base makes the bottom rice heavy.
Ingredient choices: Use basmati rather than a sticky short-grain rice for the intended texture. Mushrooms release considerable water, so their cooking stage matters more than adding extra liquid later. Whole cardamom, cinnamon and bay add aroma but should be removed or identified when serving.
Cooking control: Brown the onions, reserve the garnish portion, and reduce mushroom juices before layering. Part-cook the rice only until its outer surface softens while the centre is still firm. Finish under a close-fitting lid over low heat and rest before lifting portions.
If something goes wrong: Mushy lower layers usually indicate a wet mushroom base, fully cooked rice before layering or too much added water. Scorching suggests excessive bottom heat or too little moisture. Lift through the layers with a broad spoon instead of vigorously mixing the pot.

Storage
Cool cooked rice quickly in shallow portions, ideally refrigerating within 1 hour. Keep at 4°C or below and use within 24 hours. Reheat only once to at least 74°C throughout. Do not keep a batch already reheated for another reheating cycle.
