  5. Mount the beurre blanc: On very low heat whisk cold butter into the reduction a few cubes at a time, never allowing the sauce to boil.
  6. Finish and plate: Add lemon and chives, taste, then spoon beurre blanc around the salmon and serve immediately before the emulsion cools.
