Easy Step-by-Step Method

  1. Cook filling: Heat filling oil in a wide pan. Stir-fry garlic and ginger for 30 seconds, then cabbage and carrot for 5 minutes. Add bean sprouts and cook for another 3 minutes until hot throughout.
  2. Dry and cool: Add soy, sesame oil and pepper and cook until no liquid pools in the pan. Spread filling thinly in a shallow container and refrigerate promptly until cool; allow extra cooling time.
  3. Make paste: Stir flour and water into a smooth sealing paste.
  4. Roll: Keep unused wrappers covered. Divide cooled filling among wrappers, fold sides inward and roll tightly, sealing the final edge with paste.
  5. Heat oil safely: Put frying oil in a deep heavy pan, no more than one-third full. Heat to about 170°C and keep water away from the pan.
  6. Fry: Fry in small batches for 4–5 minutes until crisp and golden. Turn carefully and let oil return to temperature between batches.
  7. Drain and serve: Drain on a rack and serve with sweet chilli sauce. Turn off the heat and allow oil to cool completely before moving it.

Chef Notes & Tips

Hot or wet filling weakens the wrapper. The time estimate excludes cooling; do not stack a large hot mound of vegetables and leave it at room temperature.

Ingredient choices: Use egg-free wrappers when keeping the recipe plant-based and follow their thawing instructions. Cabbage and sprouts release moisture, which must be cooked off and drained. Flour-water paste seals the final edge.

Cooking control: Cool the cooked filling appropriately before wrapping and keep unused wrappers covered. Use consistent portions, fold the sides neatly and seal the edge. Fry in batches with enough room for turning and drain on a rack.

If something goes wrong: Burst rolls may be overfilled, wet inside or loosely sealed. Greasy wrappers suggest low frying heat or gaps in the roll. Cook sprouts thoroughly in the filling stage rather than assuming the brief final fry will correct an undercooked centre.

Storage

Refrigerate promptly in shallow covered containers at 4°C or below and use within 3 days. Reheat only the portion needed to at least 74°C throughout. Discard food left unrefrigerated for more than 2 hours, or 1 hour above 32°C.
