Cypriot Afelia Mushroom Stew
This mushroom stew adapts the red-wine and coriander-seed flavour direction of afelia to a plant-based dish. Mushrooms and potatoes provide contrasting textures. It should…
Hot grilled halloumi with chilled watermelon, mint and lemon: a simple Cypriot summer plate built around salty-sweet contrast.

Follow the measured ingredients, numbered method, substitutions, safety notes and cooking mode below.
Professional Chef Mode
Mise en place: chill and portion the watermelon first, pick the mint leaves, cut the lemon and have the serving platter ready before grilling the cheese. Halloumi should be the final cooked component.
Portion target: about 75 g halloumi and 175 g watermelon per serving gives a balanced starter or light plate. For a larger mezze spread, reduce the portion and serve alongside bread and other small dishes.
Heat control: use a fully preheated heavy pan and grill in a single layer. Avoid repeated flipping; one turn gives cleaner colour and reduces moisture loss.
Quality control: halloumi should be deeply golden outside but still flexible when lifted. Watermelon must stay visibly cold and crisp, with no warm pooled juice on the platter.
For restaurant service, stage cold plates and fruit in advance but grill halloumi only to order or in very small waves. This dish loses quality quickly under hot holding.
Halloumi and watermelon is one of the simplest warm-weather combinations in Cyprus: salty cheese against cold, sweet fruit. This version grills the halloumi just before serving and keeps the plate deliberately restrained so the cheese, watermelon and fresh mint remain the focus.

2. MeasureWeigh and prepare all ingredients in the order listed.
3. Control heatLow means a gentle bubble, medium cooks steadily, and high is for quick browning.
4. Check donenessUse the texture, timing and safe-temperature checks written in the method.
Complete one numbered step before moving to the next. Keep the heat and timing exactly as written.
Chef Notes
This dish succeeds through contrast, not complexity: hot salty halloumi, cold sweet watermelon and fresh mint should remain the dominant flavours.
Dry surfaces matter. Wet halloumi steams before it browns, and wet watermelon leaves a puddle that dilutes the cheese and lemon.
Do not automatically season with salt. Halloumi saltiness varies widely by producer, and the cheese usually seasons the plate by itself.
Common mistakes and rescue
Halloumi pale: the pan was not hot enough or the cheese surface was wet. Dry it and reheat the pan before the next batch.
Halloumi rubbery: it has cooled too long or was cooked excessively. Serve it immediately; reheating briefly can soften it slightly but will not fully restore the original texture.
Plate watery: drain the watermelon for a few minutes before plating and add lemon only at the end.
Dish too salty: increase the ratio of watermelon and bread rather than adding more dressing.
Dish too flat: add a little more lemon and fresh mint before adding any extra salt.
Use pasteurised dairy products and keep them refrigerated until needed. Follow package use-by instructions, and refrigerate prepared food promptly in shallow containers.
Serve immediately on a broad platter with the mint distributed evenly. Keep the watermelon chilled until the final assembly.
For best quality, assemble only what you will serve immediately. Store cut watermelon and unopened or leftover halloumi separately at 4°C or below. Use cut watermelon within 2 days and follow the halloumi package instructions after opening. Grilled halloumi can be refrigerated for up to 2 days but will become firmer; reheat it briefly in a hot pan and add it to fresh cold watermelon only at serving. Do not store the assembled dressed plate for later service.
