Halloumi and watermelon is one of the simplest warm-weather combinations in Cyprus: salty cheese against cold, sweet fruit. This version grills the halloumi just before serving and keeps the plate deliberately restrained so the cheese, watermelon and fresh mint remain the focus.

Chill and Dry the Watermelon

  1. Cut the watermelon into even wedges or 2.5–3 cm cubes. Keep it refrigerated until the last minute. If the cut fruit is very juicy, place it on kitchen paper for 5–10 minutes so excess surface liquid does not flood the plate.

Prepare the Halloumi

  1. Pat the halloumi slices thoroughly dry. Brush them with only a trace of the measured olive oil. Halloumi already contains enough fat to brown; too much oil makes the surface greasy rather than deeply coloured.

Heat the Pan

  1. Preheat a grill pan, cast-iron pan or heavy frying pan over medium-high heat for 3–4 minutes. The pan should be fully hot before the cheese goes in.

Grill the Halloumi

  1. Lay the slices in a single layer with space between them. Cook for 60–90 seconds without moving until the first side develops deep golden marks, then turn once and cook the second side for another 60–90 seconds. Remove as soon as both sides are coloured and the centre is hot and yielding.

Build the Plate Immediately

  1. Arrange the cold watermelon on a broad platter, then add the hot halloumi so every serving gets both. Do not bury the cheese under the fruit; the contrast between hot and cold is part of the dish.

Finish

  1. Drizzle the remaining olive oil and lemon juice lightly over the plate. Add mint, black pepper and optional Aleppo pepper. Do not add salt until you have tasted the halloumi; most brands provide more than enough seasoning.

Serve

  1. Serve immediately, with lemon wedges and optional village bread on the side. The halloumi is at its best in the first few minutes after grilling, before it cools and firms.

This dish succeeds through contrast, not complexity: hot salty halloumi, cold sweet watermelon and fresh mint should remain the dominant flavours.

Dry surfaces matter. Wet halloumi steams before it browns, and wet watermelon leaves a puddle that dilutes the cheese and lemon.

Do not automatically season with salt. Halloumi saltiness varies widely by producer, and the cheese usually seasons the plate by itself.

Common mistakes and rescue
Halloumi pale: the pan was not hot enough or the cheese surface was wet. Dry it and reheat the pan before the next batch.
Halloumi rubbery: it has cooled too long or was cooked excessively. Serve it immediately; reheating briefly can soften it slightly but will not fully restore the original texture.
Plate watery: drain the watermelon for a few minutes before plating and add lemon only at the end.
Dish too salty: increase the ratio of watermelon and bread rather than adding more dressing.
Dish too flat: add a little more lemon and fresh mint before adding any extra salt.

Storage

For best quality, assemble only what you will serve immediately. Store cut watermelon and unopened or leftover halloumi separately at 4°C or below. Use cut watermelon within 2 days and follow the halloumi package instructions after opening. Grilled halloumi can be refrigerated for up to 2 days but will become firmer; reheat it briefly in a hot pan and add it to fresh cold watermelon only at serving. Do not store the assembled dressed plate for later service.
