Ingredients

Easy Step-by-Step Method

  1. Preparation: Reserve several small florets, coat with oil and roast at 210°C until browned for garnish.
  2. Flavour base: Sweat leek in butter without colouring, add garlic and sliced cauliflower core, and cook 3 minutes.
  3. Main cook: Add remaining florets and stock, cover and simmer 18 minutes until completely tender.
  4. Simmer and check: Remove from heat and blend with a submerged immersion blender, or cool sufficiently for a blender approved for warm liquids. Pass through a sieve for an exceptionally smooth result.
  5. Texture and balance: Return to low heat, add cream and nutmeg, and adjust pouring consistency with stock.
  6. Finish and serve: Balance with lemon and white pepper; finish with roasted florets and hazelnuts.

Chef Notes & Tips

Use the peeled cauliflower core in the base: it has excellent flavour and reduces waste.

Ingredient choices: Wash leek layers thoroughly and use cauliflower core only where tender enough after cooking. Slice dense core pieces smaller than florets. Toast hazelnuts carefully and remove loose skins if desired.

Cooking control: Soften leek without heavy browning for a pale soup. Simmer cauliflower until fully tender, then blend with suitable equipment. Adjust stock and cream before tasting lemon and nutmeg.

If something goes wrong: A grainy soup usually needs more cauliflower cooking or blending. Excess nutmeg can dominate the mild vegetables. If the finish is heavy, test a little lemon before adding more cream.

Ingredient Substitutions

Serve with chopped toasted hazelnuts added at the last moment. Identify nuts and dairy clearly, including the garnish.

Storage

Refrigerate promptly in shallow covered containers at 4°C or below and use within 3 days. Reheat only the portion needed to at least 74°C throughout. Discard food left unrefrigerated for more than 2 hours, or 1 hour above 32°C.
