Cauliflower leek soup has a gentle savoury flavour and a smooth texture enriched with a little cream. Leek supplies sweetness, while lemon and toasted hazelnuts create a brighter finish and a crunchy contrast.

Follow the measured ingredients, numbered method, substitutions, safety notes and cooking mode below.
Wash leek layers thoroughly and use cauliflower core only where tender enough after cooking. Slice dense core pieces smaller than florets. Toast hazelnuts carefully and remove loose skins if desired.
Soften leek without heavy browning for a pale soup. Simmer cauliflower until fully tender, then blend with suitable equipment. Adjust stock and cream before tasting lemon and nutmeg.
A grainy soup usually needs more cauliflower cooking or blending. Excess nutmeg can dominate the mild vegetables. If the finish is heavy, test a little lemon before adding more cream.
