Prepare the Vine Leaves

  1. Rinse the preserved vine leaves well under cool water to remove excess brine. Taste a tiny corner of one leaf; if it is still aggressively salty, soak the leaves in fresh water for 10 minutes and drain. Trim any tough stems. If the leaves feel very firm, blanch them in simmering water for 1–2 minutes, then drain. Keep torn leaves for lining the pot.

Cook the Onion Base

  1. Heat 15 ml olive oil in a small pan over medium heat. Add the onion and cook for 5–6 minutes until soft but not browned. Add the garlic for 30 seconds, then remove from the heat and cool for 5 minutes.

Mix the Filling

  1. Combine the minced pork or pork-beef mixture, drained rice, cooked onion and garlic, 250 g grated tomato, parsley, mint, optional cinnamon, 20 ml lemon juice, 15 ml olive oil, black pepper and the salt. Mix gently until evenly combined. Do not overwork the mince and do not taste the raw filling.

Portion and Roll

  1. Lay one vine leaf vein-side up with the stem end nearest you. Add about 20–22 g filling near the base. Fold the lower edge over the filling, fold the sides inward, then roll forward into a compact cylinder. Roll firmly enough to hold its shape but not tightly; the rice needs room to expand. Repeat with the remaining leaves.

Line and Pack the Pot

  1. Line the base of a wide heavy saucepan with the reserved torn leaves. Arrange the koupepia seam-side down in snug concentric rows. A close fit helps stop them unrolling, but do not crush them together.

Add the Cooking Liquid

  1. Mix 500 ml hot water with 100 g crushed tomato, the remaining 20 ml lemon juice and 15 ml olive oil. Pour around the rolls. The liquid should come close to, but not completely drown, the top layer. Place a small heatproof plate directly over the koupepia to keep them in place.

Simmer Gently

  1. Bring the liquid just to a simmer, then immediately reduce to low heat. Cover the pan and cook for 55–65 minutes. You should see only a gentle bubble around the edge; a hard boil can split the leaves and loosen the rolls.

Check Doneness

  1. Lift one roll from the centre of the pot and open it. The rice must be fully tender with no hard white core, the vine leaf should cut easily with a fork, and the meat filling must reach at least 71°C in the centre. If the rice is still firm, add 60–100 ml hot water, re-cover and continue for 10 minutes before checking again.

Rest Before Serving

  1. Remove the pan from the heat and leave the koupepia covered for 15 minutes. This rest lets the rice settle and makes the rolls less likely to tear when lifted. Serve warm or at room temperature with a little of the cooking liquid spooned over them.

Preserved vine leaves vary dramatically in saltiness and tenderness. Taste and rinse them before deciding how much salt the filling needs.

The rice goes in raw and expands inside the leaf. That is why each roll needs a modest portion of filling and a little internal space. Overfilling is the fastest way to create split koupepia.

Pork gives a particularly juicy Cypriot-style filling; a 50:50 pork-and-beef mixture gives a slightly firmer texture. Keep the mince cold until mixing and do not taste it raw.

Common mistakes and rescue
Rolls split: they were rolled too tightly, overfilled or boiled too hard. Use less filling and maintain a gentle simmer.
Rice hard: there was not enough liquid or cooking time. Add hot water, cover and continue gently in 10-minute intervals.
Leaves tough: they needed more rinsing/blanching or simply more simmering time. Continue covered with enough liquid.
Filling dry: the mince was too lean, the rolls cooked too aggressively or too little tomato/oil was used. Pork or mixed mince is more forgiving.
Dish too salty: the preserved leaves were not desalinated enough. Serve with unsalted yogurt or lemon and reduce filling salt next time rather than diluting the cooked pot with large amounts of water.

Lift carefully and serve several rolls per portion with a little cooking sauce. Follow rice-specific cooling and storage instructions for leftovers.

Storage

Cool cooked rice quickly in shallow portions, ideally refrigerating within 1 hour. Keep at 4°C or below and use within 24 hours. Reheat only once to at least 74°C throughout. Do not keep a batch already reheated for another reheating cycle.
