Easy Step-by-Step Method

  1. Marinate the lamb: Mix lamb with half the olive oil, half the lemon, garlic, oregano, salt and pepper; cover and refrigerate for 1–4 hours.
  2. Thread and grill: Place lamb loosely on skewers and grill over high heat, turning for even browning until the largest lamb pieces reach at least 63°C in the centre.
  3. Rest: Move skewers to a warm plate for 5 minutes while heating the pita.
  4. Prepare the village salad: Combine tomato, cucumber, pepper, onion and olives with remaining olive oil and lemon.
  5. Serve: Plate the rested lamb with village salad and warm pita, spooning the clean resting juices over the meat.

Cut lamb cubes evenly and leave space between them on the skewer so they brown rather than steam. Allow at least 1 hour of refrigerated marinating in addition to preparation and cooking.
