Cypriot Halloumi Salad
A fresh Cypriot salad with grilled halloumi, tomatoes, cucumber, onion, olive oil, lemon, and oregano.
Lamb souvlaki with village salad pairs grilled lamb-leg cubes with juicy tomato, cucumber and olives. Lemon and oregano season the meat, while the salad provides a fresh contrast. Lamb leg is suited to a shorter cook than shoulder.

Follow the measured ingredients, numbered method, substitutions, safety notes and cooking mode below.
Cut cubes evenly and use food-safe refrigerated marinating. Slice onion and pepper for easy eating in the salad. Olives and the lamb marinade already contain salt, so avoid automatically salting every component heavily.
Grill lamb in spaced portions, turn for even colour and follow safe whole-lamb temperature and rest guidance. Prepare the salad separately with clean utensils. Warm pita close to serving.
Tough cubes may have cooked too long or been cut unevenly. A wet salad can come from early salting. Do not pour raw lamb marinade over the finished vegetables.

For intact lamb chops and roasts, reach at least 63°C and rest for 3 minutes. Shoulder and other braising cuts need longer to become tender. Use separate raw-meat utensils.
Serve rested lamb with salad and warm pita separately or assembled immediately. Keep the meat and vegetables balanced across portions.
Keep prepared components covered at 4°C or below. Use within 2 days, or sooner if a package use-by date requires it. Store dressing separately where possible; do not leave perishable salad at room temperature for more than 2 hours.
