  1. Preparation: Separate small broccoli florets from peeled diced stems; blanch a handful of florets for garnish.
  2. Flavour base: Cook onion, carrot and stems in butter until tender, then stir in flour and cook for 2 minutes.
  3. Main cook: Whisk in stock and milk gradually, bring to a gentle simmer and add remaining broccoli.
  4. Simmer and check: Cook 10–12 minutes until broccoli is tender, then blend only half to retain pieces.
  5. Texture and balance: Remove from heat and add cheddar by handfuls, stirring until melted before the next addition.
  6. Finish and serve: Season with nutmeg, lemon and white pepper; never boil after adding cheese.

Finely grated room-temperature cheese melts smoothly; pre-shredded cheese can make the soup grainy.

Ingredient choices: Peel fibrous broccoli stems and cut them smaller than florets. Finely grate cheddar so it melts evenly. Mature cheese and stock can both be salty, so postpone final salt adjustment.

Cooking control: Cook the butter-flour base before adding stock and milk gradually. Simmer broccoli to tenderness, then lower heat before stirring in cheese. Add cheese in portions and avoid a rolling boil afterward.
