  1. Roast whole beetroot wrapped at 200°C until a knife enters easily, then cool and peel.
  2. Sweat red onion in olive oil, add diced apple and cook 3 minutes without browning.
  3. Add stock and simmer until apple softens, then combine with beetroot and blend.
  4. Stir in apple juice and cider vinegar and cool rapidly over an ice bath.
  5. Chill at least 2 hours, then adjust salt and acidity.
  6. Serve with yogurt, dill and fine apple dice.
