Prepare the Quinoa

  1. Rinse the quinoa thoroughly under cold running water and drain well. Place it in a saucepan with the water or vegetable stock and salt.
  2. Bring to a gentle boil, cover and reduce to low heat. Cook for approximately 15 minutes, or until the liquid has been absorbed. Remove from the heat and rest covered for 5 minutes. Fluff gently with a fork and allow to cool slightly.

Preheat the Oven

  1. Preheat the oven to 220°C conventional / 200°C fan.

Prepare the Vegetables

  1. Combine the peppers, zucchini, eggplant and red onion with olive oil, salt, black pepper, oregano and smoked paprika.
  2. Spread evenly over a large baking tray. Do not overcrowd the vegetables.

Roast

  1. Roast for 20 minutes. Add the cherry tomatoes, gently turn the vegetables and roast for another 8–10 minutes.
  2. The vegetables should be tender with lightly caramelised edges while still holding their shape.

Prepare the Dressing

  1. Whisk together the extra-virgin olive oil, lemon juice, zest, Dijon mustard, garlic, salt and black pepper until lightly emulsified.

Assemble

  1. Place the quinoa in a large mixing bowl. Add the roasted vegetables, parsley and mint.
  2. Pour over approximately three-quarters of the dressing and gently toss. Taste before adding the remaining dressing.

Finish

  1. Transfer to a serving bowl. Finish with toasted pumpkin seeds, fresh herbs and lemon wedges.
  2. Serve slightly warm, at room temperature or chilled.
