Easy Step-by-Step Method

Roast the Aubergines

  1. Preheat the oven to 230Β°C conventional / 210Β°C fan. Pierce the aubergines several times with a fork and place them on a lined tray.
  2. Roast for approximately 30–35 minutes, turning once, until completely soft and the skin is dark and lightly charred.

Drain the Aubergine

  1. Allow the aubergines to cool slightly. Cut them open, scoop out the flesh and place it in a fine-mesh strainer for 10 minutes to remove excess liquid.

Prepare the Baba Ganoush

  1. Place the drained aubergine flesh in a bowl. Add tahini, lemon juice, garlic, olive oil, salt, cumin and optional smoked paprika.
  2. Mash with a fork or mix gently until creamy but still slightly textured.

Prepare the Chickpeas

  1. Heat the olive oil in a frying pan over medium heat.
  2. Add the chickpeas, cumin, smoked paprika, salt and black pepper. Cook for approximately 5–6 minutes, stirring occasionally, until hot and lightly toasted.

Prepare the Vegetables

  1. Dice the cucumber, halve the tomatoes, slice the red onion and radish, and prepare the salad leaves and fresh herbs.

Assemble the Bowl

  1. Spoon the baba ganoush into the base or centre of each serving bowl.
  2. Arrange the chickpeas, cucumber, tomatoes, red onion, radish and salad leaves around it.

Finish and Serve

  1. Finish with parsley, mint, toasted sesame seeds, optional pomegranate seeds, a drizzle of extra-virgin olive oil and a lemon wedge.
  2. Serve immediately.

Roast the aubergines until completely soft for the best texture.
For stronger smoky flavour, char the aubergines over an open flame or grill before finishing in the oven.

Cooking control: Cook the aubergines until the flesh collapses easily, then separate it from the skin and let the liquid drain away. Mix the cooled flesh with tahini, lemon and garlic in stages. Prepare the salad components separately so their juices do not dilute the dip before service.

If something goes wrong: If the dip tastes harsh, check whether the problem is raw garlic, bitter tahini or too much lemon before adjusting it. More oil does not remove bitterness. If it is watery, draining the aubergine earlier is more effective than adding excessive tahini afterward.
