Easy Step-by-Step Method

Prepare the Dough

  1. Place the flour and salt in a mixing bowl.
  2. Gradually add the water while mixing until a firm but smooth dough forms.
  3. Knead for 8–10 minutes until elastic.
  4. Cover and rest for 30 minutes.

Prepare the Vegetables

  1. Finely chop the cabbage, onion and spring onion.
  2. Grate the carrot and crumble the tofu.
  3. Keep the vegetables as dry as possible to prevent a watery filling.

Cook the Filling

  1. Heat the oil in a frying pan over medium-high heat.
  2. Add the onion, ginger and garlic and cook for approximately 2 minutes.
  3. Add cabbage, carrot and tofu.
  4. Cook for 3–4 minutes, stirring regularly, until the vegetables soften slightly but retain texture.

Season the Filling

  1. Add soy sauce, cumin, coriander, black pepper and salt.
  2. Cook for another 1–2 minutes.
  3. Remove from heat and stir in spring onion and fresh coriander.
  4. Cool completely before filling the momos.

Prepare the Chutney

  1. Heat the oil in a saucepan over medium heat.
  2. Add cumin seeds, dried chillies, garlic and ginger and cook briefly until fragrant.
  3. Add the tomatoes and salt.
  4. Cook for 8–10 minutes until the tomatoes are completely soft.

Toast the Sesame Seeds

  1. Toast sesame seeds in a dry pan over medium-low heat for 2–3 minutes, stirring frequently, until lightly golden and aromatic. Do not burn them.

Blend the Chutney

  1. Transfer the cooked tomato mixture and toasted sesame seeds to a blender.
  2. Add lemon juice and enough water to achieve a thick but pourable chutney.
  3. Blend until smooth.
  4. Taste and adjust salt, chilli and acidity.

Shape the Dough

  1. Divide the rested dough into approximately 24 equal pieces.
  2. Roll each piece into a small ball.
  3. Roll each ball into a thin circular wrapper approximately 8–9 cm wide, keeping the centre slightly thicker than the edges.

Fill the Momos

  1. Place approximately 15–18 g filling in the centre of each wrapper.
  2. Moisten the edge lightly if necessary.
  3. Pleat and seal securely, ensuring no filling escapes.

Steam the Momos

  1. Lightly oil the steamer trays or line them appropriately.
  2. Arrange the momos with space between each piece.
  3. Steam over actively simmering water for approximately 10–12 minutes, or until the wrappers are cooked, slightly translucent and no longer doughy.

Serve

  1. Serve the momos immediately with warm or room-temperature tomato sesame chutney.

Chef Notes & Tips

Keep the vegetable filling relatively dry to prevent soggy wrappers.
Allow the filling to cool completely before shaping.
Do not overfill the wrappers.
Roll wrapper edges slightly thinner than the centre for easier pleating.
Keep unused dough covered while shaping to prevent drying.
Toast sesame seeds gently for better aroma without bitterness.
Steam momos only after the steamer has produced consistent steam.

Ingredient choices: Finely cut cabbage, carrot and onion are easier to enclose than coarse pieces. Tofu contributes substance but should be well drained. Sesame thickens the chutney and supplies richness; toast it carefully because burnt seeds make the whole sauce bitter.

Cooking control: Rest the dough so it rolls without springing back, and keep unused wrappers covered. Make the wrapper edge thinner than the centre, leave a clean sealing margin and avoid overfilling. Space the dumplings in the steamer so expanding wrappers do not stick together.

If something goes wrong: If seams open, look for dry wrapper edges, filling caught in the seal or too much filling. If the base sticks, check the steamer lining and light oiling before the next batch. Blend the chutney to the texture you prefer, adding water gradually.
