  2. Cook aromatics: Heat oil in a heavy saucepan and soften onion and celery for 8 minutes. Add garlic and tomato paste for 1 minute.
  3. Start the taro: Add taro, stock, bay leaves, salt and pepper. Bring to a boil, cover partly and simmer for 20 minutes.
  4. Add tomato: Add chopped tomatoes and continue simmering for 30–40 minutes, or longer if needed, until the taro is thoroughly soft throughout with no firm or chalky centre.
  5. Adjust the stew: Move pieces gently with a spoon. Add a small amount of water if needed, or uncover briefly to thicken the sauce once the taro is fully cooked.
  6. Finish: Remove bay leaves, add lemon gradually and finish with parsley. Do not serve any undercooked pieces.
