  1. Preparation: Cut all vegetables to a consistent small dice so each spoonful cooks and eats evenly.
  2. Flavour base: Sweat onion, carrot and celery in olive oil, then add courgette and green beans for 3 minutes.
  3. Main cook: Add tomato, stock and vegetarian cheese rind and simmer 20 minutes until firm vegetables are almost tender.
  4. Simmer and check: Add beans and ditalini and cook until pasta is al dente, stirring to prevent sticking.
  5. Texture and balance: Remove the rind, rest 5 minutes and adjust the broth because pasta continues absorbing liquid.
  6. Finish and serve: Finish with torn basil, black pepper and the optional grated vegetarian cheese.

Minestrone is defined by seasonal balance; maintain equal cuts and add delicate vegetables later.

Ingredient choices: Use cooked borlotti beans and ditalini or another clearly specified small pasta. The rind must be edible and from a vegetarian hard cheese when retaining that claim. Remove any wax or non-edible coating rather than adding it to soup.

Cooking control: Cook firmer vegetables before courgette and pasta. Simmer with the edible rind as directed and remove it before serving. Add basil near the finish and taste salt after the rind has flavoured the broth.

If something goes wrong: Mushy vegetables indicate that all ingredients were added too early together. Thick leftovers usually reflect pasta absorbing broth; keep pasta separate for planned storage. A salty rind limits later reduction.
