Easy Step-by-Step Method

  1. Cook pasta: Boil pasta in its salted water until just short of al dente, then drain.
  2. Make the filling: Cook onion in oil for 6 minutes, add beef and brown while breaking up clumps. Add garlic, tomato paste, cinnamon, mint, pepper and half the recipe salt.
  3. Reduce filling: Add tomatoes and simmer for 20 minutes until thick and the beef is thoroughly cooked.
  4. Make béchamel: Melt butter, stir in flour for 2 minutes and whisk in milk gradually. Simmer until thick, then remove from heat for 5 minutes. Stir in nutmeg, remaining salt, half the halloumi and beaten egg.
  5. Layer: Heat oven to 190°C conventional / 170°C fan. Put half the pasta in a 30 x 20 cm dish, add beef filling, then remaining pasta. Cover with béchamel and remaining halloumi.
  6. Bake and rest: Bake for 35–45 minutes until golden and at least 74°C in the centre. Rest for 20 minutes before cutting into portions.

Chef Notes & Tips

This version uses beef. Halloumi adds salt, so taste the filling and white sauce before adding the full listed seasoning.

Ingredient choices: Use tubular pasta and cook it only to the stage described before baking. Halloumi adds salt as well as flavour. The béchamel contains flour, milk and egg, so the full dish has several distinct allergen sources.

Cooking control: Reduce the meat sauce and prepare a smooth béchamel before assembly. Let the sauce cool slightly before incorporating egg as directed. Layer evenly, bake until safely hot in the centre and allow a settling period before cutting.

If something goes wrong: A loose slice may reflect watery meat sauce or insufficient resting. Hard pasta edges need better sauce coverage. A grainy topping may have overheated when egg was added.
