Easy Step-by-Step Method

  1. Preparation: Sweat onion, carrot and celery in olive oil for 10 minutes until soft and lightly golden.
  2. Flavour base: Add garlic and rosemary for 1 minute, then stir in tomato and cook until slightly concentrated.
  3. Main cook: Add stock and two-thirds of the beans; simmer 15 minutes to develop the broth.
  4. Simmer and check: Blend one ladle of beans and broth, return it to the pot, then add sliced kale.
  5. Texture and balance: Simmer 8–10 minutes until kale is tender but still green; add remaining beans to heat through.
  6. Finish and serve: Remove rosemary, balance with vinegar and pepper, and finish with raw olive oil.

Chef Notes & Tips

Adding some beans at the end preserves their shape while blended beans create a naturally creamy broth.

Ingredient choices: Use fully cooked beans and remove tough kale stalks or slice tender stalks finely. Cavolo nero and curly kale differ in texture, so judge leaf tenderness during simmering. Keep the rosemary sprig easy to remove.

Cooking control: Soften the onion, carrot and celery before adding tomato and stock. Simmer greens until pleasant to chew, then warm beans through without rough stirring. Adjust thickness and vinegar after the vegetables are tender.

If something goes wrong: Tough greens need more cooking or finer trimming. A thin broth can be thickened with a few crushed cooked beans. If rosemary dominates, remove the sprig earlier rather than adding more vinegar.

Ingredient Substitutions

  • ↔ Swiss chard can replace kale; borlotti beans may replace cannellini.

Food Safety & Doneness

Wash produce and use clean utensils. Keep perishable ingredients refrigerated. Refrigerate cooked food in shallow containers within 2 hours, or within 1 hour when the surroundings exceed 32°C. For hot soup, use an immersion blender with its head submerged, or cool sufficiently before using a blender approved for warm liquids. Never seal hot soup in a closed cup blender.

Serving & Plating

Serve with beans and greens evenly distributed. Bread can be offered separately, especially if keeping the soup’s own dietary description distinct.

Storage

Refrigerate promptly in shallow covered containers at 4°C or below and use within 3 days. Reheat only the portion needed to at least 74°C throughout. Discard food left unrefrigerated for more than 2 hours, or 1 hour above 32°C.
